The Cupcake Batter

On a recent rainy weekend the Rose children were promised homemade cupcakes with real chocolate frosting. I made the frosting while everyone was napping. Making the actual cupcakes, however, was a group effort. The children loved the heavy consistency of the cake flour, which had never made it into any of our family baking escapades, and we all marveled at how light and fluffy the batter became when we folded in the beaten egg whites. The best part of all, of course, was smearing on the chocolate icing and decorating the lovely little cupcakes.

The nice folks at MSLO used restraint in their picture—just some beautifully placed nonpareils; my kids went whole hog, digging out our Christmas cookie sprinkles and decorations to adorn their creations. We saved a few without icing for Dad, who is not fan of chocolate. As the kids say, “That’s weird.”
