Pickled Snow Peas

It was the day before 4th of July and I still didn’t have a hostess gift. I wanted to cook something, but couldn’t think of what, so I  perused our DIY Pantry Pinterest board for inspiration. Pickled veggies seemed like a good option, and Andrea Nguyen’s take on Pickled Snow Peas from The Preservation Kitchen by Paul Virant and Kate Leahy (Ten Speed Press, April 2012) seemed to be the perfect one.

Author Paul Virant writes in the book that this is one of his most-used and favorite pickles, and I can absolutely see why. Every bite of these pickled snow peas, which were ready in a matter of hours, is an exciting surprise in your mouth. Awaiting our 4th of July feast, we snacked on sandwiches with goat cheese, the pickled snow peas, and basil, which is bound to become a regular lunch item of mine.
