When you invite your friends for 4th of July, you know the first thing you think of when you start planning is, “what do I cook for them?!” We can help with that. When your friends are over at your house to celebrate the holiday, the last thing you want to be doing is sweating in the kitchen preparing food. This menu includes prepare-ahead dishes that are sure to impress. Also, we might add, these ice cream sandwiches are the PERFECT treat to end a hot July day!
4th of July Menu #3: For Your Friends
The Hugo Cocktail from The Lee Bros. Charleston Kitchen by Matt Lee and Ted Lee (recipe below)
Pecan-Crusted Pork Tenderloin Pinwheels with Carolina Mustard Sauce from Big Bob Gibson’s BBQ Book by Chris Lilly

Recipe from The Lee Bros. Charleston Kitchen by Matt Lee and Ted Lee
For each cocktail: time: 3 minutes
2 ounces (1/4 cup) dark rum, such as Mount Gay or Myers’s
2 teaspoons fresh ginger juice (from 1 1/2 tablespoons grated fresh ginger pressed through a paper towel)
2 lime wedges
2 teaspoons sugar
Dash of aromatic cocktail bitters, such as Angostura
Splash of seltzer
A rod of peeled fresh ginger (optional)
1. Fill a cocktail shaker with ice cubes. Add the rum, ginger juice, 1 of the lime wedges, the sugar, and
bitters, if using. Shake vigorously.
2. Fill a rocks glass with ice cubes. Pour the cocktail over the ice, top off with seltzer, and garnish with the remaining lime wedge and a rod of ginger, if using.
